Ingredients:
2 ripe avocados
4 large eggs
Salt and pepper, to taste
Optional toppings: chopped chives, hot sauce, shredded cheese, salsa, meat
Instructions:
Preheat your oven to 425°F (220°C).
Slice the avocados in half and remove the pits. Scoop out a bit of the flesh from each half to create a larger well for the eggs.
Place the avocado halves in a baking dish, ensuring they are stable and won’t tip over.
Crack an egg into each avocado half, being careful not to overflow the avocado.
Season with salt and pepper to taste.
Bake in the preheated oven for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
